Keep going toward Deltona Boulevard and you will pass a small storefront that went from a two-line announcement to a working kitchen in about six weeks. Spring Hill's restaurant scene has moved fast this year, but not evenly, and the gap between "announced" and "actually open" is where the real story sits.
Over the past nine months, five different food and drink businesses in Spring Hill have gone through some version of this cycle: a plan filed, a post shared, a building repurposed. Some cleared it in a season. One has been stuck at the same stage since February. Here is what changed, in the order it happened, and what it tells a person who already lives here about which "opening soon" signs to trust.
The Fastest Turnaround: Colombia Que Chimba Café
In early December 2025, a local business news outlet confirmed with co-owner Robert Madigan that a new Colombian café was coming to 3452 Deltona Boulevard, one building over from Spring Hill Glass & Mirror. Colombia Que Chimba Café now serves Colombian coffee and traditional dishes in a stretch of Deltona Boulevard that already includes Izo's Latin Cafe, Philly's Best Cheesesteak House, Back Roads Pub, and Turnpikes, a corner of Spring Hill that has quietly become the closest thing the area has to a Latin food row. State filing records show the business entity was registered in October 2025, which lines up with a roughly three-month window from paperwork to open door. That is fast for a build-out, and it is the pace other Spring Hill restaurants have not matched this year.
The Golf Clubhouse That Became a Restaurant
The biggest physical change came at 10599 Fairchild Road, where the former Seven Hills Golf Course clubhouse now operates as Seven Hills Social. It opened around December 2025 with room for roughly 150 guests, serving American food with a modern lean: appetizers, salads, pastas, seafood, and a menu the restaurant itself describes as still being tweaked into shape. Early reviewers mention fish tacos, crispy Brussels sprouts, and a manager named Dave who checks in on tables personally.
What makes this one worth noting isn't the menu. It's the building. A golf clubhouse sitting mostly idle for part of the year became a 150-seat restaurant with a patio and trivia nights inside a single season. That kind of adaptive reuse doesn't happen often in Spring Hill, and it says something about which existing structures in this area still have life left in them when the right operator shows up.
The One That's Still Just a Sign
Here is where the pattern breaks. In February 2026, a local business outlet reported that SoFresh, a healthy-bowl franchise founded by former University of Florida student John Williams, was preparing to open at 170 Mariner Boulevard, joining a stretch of the corridor that already includes Applebee's, Dunkin', Breakfast Club of Seven Hills, and Sakura Asian Cuisine. That was more than six months ago.
As of this writing, the SoFresh corporate site still lists the Spring Hill location's hours as "Coming Soon" across every day of the week, no exceptions. The chain has locations open and operating in Boynton Beach, Bradenton, Jacksonville, and St. Augustine, so this isn't a company still working out its concept. Something specific to the Mariner Boulevard build-out is taking longer than announced. For a resident who has been checking the storefront every few weeks expecting sandwich boards and a soft-open date, the honest answer right now is: not yet, and there's no public timeline for when.
Days Old, Not Months
The newest name on this list is barely a name yet. On August 21, 2026, a local outlet reported that La Casa del Sazón, described in its own materials as "a Restaurant & Lounge w/ Puerto Rican Roots & Urban Flavor," is coming to 4560 Commercial Way. The outlet found the listing through submitted plan review documents, not a press release, and owner David Gonzalez wasn't available for comment when reached.
The restaurant's own Instagram account has been building toward the opening for at least a month, telling followers:
"The best is yet to come, and we can't wait to share our sazón with all of you."
There's no opening date attached to that yet, which puts La Casa del Sazón in the same early stage Colombia Que Chimba Café was in back in December, before it went from filed paperwork to a working café in about twelve weeks. Whether this one follows that timeline or the SoFresh timeline is the kind of thing only a look at the actual storefront, not the announcement, will answer.
The One That Never Needed an Announcement
While all of that has been shifting, Nouvelle Cuisine has kept doing exactly what it has done since 1999. Chef Jan Kinds, who trained in his family's restaurant in Bruges, Belgium, and business partner Isabelle Roos have run the Belgian-French fine dining room at 10531 Spring Hill Drive for 27 years without a rebrand, a relocation, or a menu overhaul. It currently ranks fifth out of 155 restaurants tracked for the Spring Hill area on Tripadvisor, holding a 4.5 out of 5 across hundreds of reviews.
Regulars order the same things they ordered a decade ago: escargot bourguignon, chateaubriand with béarnaise, the gratin dauphinois the kitchen still won't share the recipe for. One frequent complaint in the reviews, that the menu doesn't change much, doubles as the restaurant's whole pitch. In a year when four other Spring Hill food businesses have been mid-transition, Nouvelle Cuisine is the fixed point everyone else gets compared against, tucked into an unassuming strip center that gives zero indication of what's inside.
